This is a very soft corn bread with one whole ear of corn. It was very soft and fluffy and we enjoyed the original flavour of the corn.

I think its better than the Corn Breads that we get here..No preservatives and artificial flavouring.

Ingredients:
- Bread Flour- 4 cups
- Sugar- 1/4 cup
- Salt- 3/4 tsp
- Milk powder- 3 tbsp
- Yeast- 3/4 tbsp
- Butter- 20 grams
- Sweet corn- 1 ear( remove the corn kernels from the ear)
- Water- 1-1/2 cup
- Olive/ Veg oil- 2 tbsp
Method:
- Blend 1/2 the quantity of the corn with 1/2 cup water to a smooth liquid.
- Mix the flour and the remaining ingredients except butter and oil.
- I do the kneading in my Kitchen aid.
- Once it forms a mass add in the butter and knead until the dough is elastic and bounces back when u poke with your index finger.
- Apply the vegetable oil and cover with the cling foil.
- Allow the dough to rise until double in size.
- Mine took about 2 hours.
- Deflate the dough and divide into three equal parts.
- Gently roll using a rolling pin and fold like a swiss roll and keep inside a 9 inch loaf pan which is pre-greased with butter.
- Allow to rise until double and apply a milk wash just before baking.
- Bake in preheated oven at 180 degree C for 30-40 minutes.
- Once the top crust become brown cover with an aluminium foil so that the inside gets cooked well.
- Take the pan out and allow to cool down a bit before de-moulding it and allow to cool down completely on a wire rack.
- Healthy corn bread is ready to be sliced and served...
