Basmati- 1.5 cups
Carrot- 2
Beans-4 nos
Onion- 2 medium
Garlic- 1 flake
Capsicum- 1/2 (I used green and red)
Celery- 1 tbsp (leaves removed and the stem chopped finely)
Spring onion- 2 Tbps (chopped for final garnish)
Oil- 2 tbsp
Pepper- 1/4 tsp or more
Salt - to taste
Chicken- 1/2 cup, more the better ( cooked in pressure cooker with salt and pepper, bones removed and shreded)
Egg- 1 (mix with pepper and salt and scramble fried)
Shrimp- 12 (cleanes and cooked with a dash of salt and pepper)
Method:
Wash and soak the rice for at least 15 minutes. I usually soak the rice at night and keep in fridge to prepare in the morning.
Boil 5 cups of water and add 1tsp salt.When it boils add the drained rice and cook until the basmati is fully cooked.
Drain and keep it ready.
While the rice is cooking, cut the vegetables into small cubes.
You can use the mixed vegetables availbe in packets. But I always prefer fresh vegetables.
Heat oil in a non-stick pan. Add the chopped celery and grated garlic.Saute until the garlic turns golden brown.
Add the chopped onion and carrot. Add salt and saute for 3 minutes.
When the carrots are a bit cooked add in the capsicum.
Saute for another 1 minute.
Mix in shredded chicken pcs and the shrimp. Add pepper at this point.
Mix in the rice, and finally the fried egg and spring onion.
Switch off the fire and serve.
